We treat ourselves with this homemade granola for breakfast, after our workouts, or just anytime we need a pick-me-up…
2 cup rolled oats
1 cup almonds
1 cup pumpkin seeds
1 cup dates, pitted and chopped
½ cup cranberries
¼ cup coconut chips
3 tbsp coconut oil
Mix oats, almonds, and coconut oil together in a baking pan. Bake at 150 degrees Celsius for 45 minutes, stirring every 15 minutes. After 30 minutes, add the pumpkin seeds, dates, and cranberries. Let cool for 10 minutes.
Top with some coconut chips. Enjoy.
I had mine as a parfait, layers of coconut yogurt between. You can mix with a smoothie of your choice or unsweetened almond milk. You can even have it plain as a trail mix.
