Mixed Nut Chocolate Cake

 
 

Ingredients

 

Toppings

  • ½ cup cacao powder
  • ½ cup melted dark chocolate
  • ¼ cup Pecans, macadamia nuts, and hazelnuts
  • 2 tbsp maple syrup

Cake

  • 1 ½ cup dates
  • ½ cup melted dark chocolate
  • ½ cup cacao powder
  • 1 cup almond butter
  • 1 cup almond milk
  • 1 cup peanut butter
  • 1 cup chickpea and fava bean flour
  • 1 tsp baking soda

Recipe

Toppings:

In a small pan, mix 1 tbsp coconut oil with the dark chocolate slabs, and on medium heat, melt, and add the cacao. Next, in a separate pan on medium heat, caramelize the mixed nuts in maple syrup.

Cake:

Preheat oven to 180 degrees Celsius.  Line one large cake pan with coconut oil. Mix the cake ingredients (along with half the dark chocolate mixture) in a food processor and pour into the bottom of the cake pan. Put the pan into the oven and bake for 30-45 minutes or until a fork comes out dry after poked in the middle. Set aside for 10 minutes to cool. Carefully remove the cake pan siding. Pour the toppings mixture over the cake.
