Layered Pumpkin Oats

Autumn Oats

With pumpkin and chia seed pudding layers

 

 

Ingredients

1/4 cup rolled oats

1 cup oat-milk

2 tbsp Almond butter

2 walnuts, chopped roughly

2 tbsp maple syrup

2 tbsp chia seeds

2 tbsp pumpkin spice (4 parts ground cinnamon, 2 parts ground ginger, 1 part ground cloves, 1/2 teaspoon ground nutmeg)

6 tbsp pumpkin puree

Toppings

1/4 cup pecans

2 tbsp coconut yogurt 

Method

Pour the oat milk, oats, almond butter, 1 tbsp maple syrup and chia seeds into a jar with an airtight lid.

Place in the refrigerator overnight

Pour the pumpkin puree into a pan and cook on medium heat for 5 minutes while adding 1 tbsp maple syrup,, pumpkin spice, and walnuts.

Pour the overnight chia seed oat mixture into serving glasses or bowls.

Layer the pumpkin mixture atop this layer.

Top with pecans and some coconut yogurt.
