Vegan Banana Bread

Not your Grandma’s Banana Bread

A healthy version of a classic!




1 1/2 cup fava/chickpea flour

3/4 cup coconut sugar

1 cup mashed banana

1/4 teaspoon salt

1/4 cup maple syrup

1 teaspoon baking powder

1 teaspoon baking soda

2 teaspoon vanilla

1/3 cup olive oil (coconut oil or vegan butter also works well)

3/4 cup water



Preheat oven to 180 Celsius.

Mix dry and wet ingredients, then combine them, whisking until you have a smooth consistency.

Layer this mixture in a baking pan. Add banana slices on top.

Bake for 25-40 minutes, depending on your oven. When you can poke a fork in and it comes out dry, you know it’s done.
