Vegan Chocolate Banana Cake

INGREDIENTS

Dry

1 1/2 cup chickpea flour

1/2 cup cacao powder

1 tsp baking powder

1 tsp baking soda

1/2 cup coconut sugar

pinch of salt

Wet

1 tbsp apple cider vinegar

1 cup olive oil

3/4 cup oat milk

1/4 cup tahini

1 tsp vanilla extract

1 cup mashed overripe bananas

1 cup pecans, crumbled

1 cup dark chocolate chips

 

METHOD

Preheat oven to 180 Celsius.

Mix dry and wet ingredients (except for pecans and chocolate chips), then combine them, whisking until you have a smooth consistency.

Add half the pecans and chocolate chips, mixing into the batter

Layer this mixture in a baking pan. Add banana slices and the remaining pecans and chocolate chips on top.

Bake for 25-40 minutes, depending on your oven. When you can poke a fork in and it comes out dry, you know it’s done.
